Piri Piri Chicken

This recipe is awesome and very easy to make. Maybe you've heard about Nando's, the worldwide known restaurant that is famous for it's chicken. Well, now you can make it at home as well, just by following these steps.

What you will need:

- 1 chicken or pieces of your favourite part of the chicken (max. 8 pieces)
- 2 chilli peppers
- 1 big red bell pepper or sweet ramiro pepper
- 1 teaspoon of paprika
- 3 tablespoons of lemon juice
- 3 garlic cloves
 - 1 onion
- 1 tomato
- 1 tablespoon of tomato paste/passatta
- salt
- olive oil

Start by preparing your chicken. If you're using a whole chicken you will want to cut it in pieces for better cooking. Keep them in a big bowl. Cut all the peppers in half and remove all the seeds and stems. Be careful not to touch your eyes as the chilli peppers can be really strong. Make sure you wash your hands after preparing the peppers. Peel your garlic cloves and cut your tomato in four equal parts and place everything in a blender along with the peppers. Then you just need to add all the remaining ingredients (except the olive oil and the salt) in a blender. The olive oil has to cover all the ingredients in the blender. Add a tablespoon of salt to the mix. Blend everything until you have a kind of smoothie consistency. Then add the mix to the chicken and let it marinate for at least 4 hours. When the time has past, you will need to create a crust in your chicken by putting it in a pan grill and let it grill until you get a crust like the one shown in the picture. Don't worry if it's not properly cooked inside because the next step will be placing the chicken in the oven, covered with aluminium foil so it cooks in its own steam. You need to do that for at least 35 minutes in a pre-heated oven at 200 degrees. After you're finished you'll have a moist and tender chicken ready to be served. Serve with chips or wedges and some salad.
