Mushroom Soup

This is a very common recipe in Ireland, where I live now, and there's nothing better than a home-made soup. Why don't you give it a try? You'll see it's worth it ;)


What you will need:

- 25g butter
- 1 onion
- 250g mushrooms
- 25g flour
- 600ml chicken stock
-150ml milk
- 4 tablespoons of cream
- salt
- pepper

You'll need to start by dicing the onion in small pieces and fry it in butter in a pan. When the onions become transparent, add the mushrooms, also diced. Let it cook for a while, until you see the mushrooms start loosing their water. Then sprinkle the flour in the pan, always stirring. Gradually add the stock and the milk without ever stop stirring. Season with salt and pepper to taste and let it simmer with lid for at least 20 minutes. After simmering, use a hand blender to turn your soup into a velvety cream. Then you can add the cream and mix it very well. Serve it hot.
