Black Beans As Side Dish

This kind of side dish is very common in Brazil and Portugal and this is just a version I like to make very often. It normally goes with barbecue meat and/or white rice.


And what do you need?

- Olive oil
- 1 diced onion
- 3 garlic cloves finelly chopped
- 1 can of black beans
- 1/2 can of water measured in the black beans can
- diced chorizo and/or diced bacon
- 1 teaspoon of cornstarch (dissolve it with 2 tablespoons of water)
- Salt
- Pepper

Start by putting the olive oil, the onion and the garlic in one pan and let them fry until the onion is transparent. By this time add the chorizo/bacon and let them fry again without letting the garlic burn. Add the canned beans to the previous ingredients and stir. Add the water and let the beans boil for at least 5 minutes. Season with salt and pepper. After the 5 minutes, add the cornstarch and let boil for another 5 minutes. Be careful not to burn the beans on the bottom. Always use medium heat. When the mixture has thickened your side beans are ready.

Serve with barbecued meats and some white rice. You won't regret it ;)
